Berry Good for You – The Season to Forage Free Nutritional Foods
‘I spy with my little eye… that it is a good season for berries’.
Deep dark elderberry jewels hang in clusters ready for harvest and what products can be made from these beautiful berries. Elderberry jam, elderberry jelly and elderberry wine are wonderful things to have ready for cozying up on those winter evenings.
Having a reputation for being a great remedy for colds and flu Elderberries can also be made into a delicious juice. Full of vitamins, this is a definite ‘must’ to keep ready for winter sniffles and coughs.

Cut about 2 kg of elderberries on the stem. If you use light rubber gloves, you will avoid stained and smelly fingers.
When you get home, use a fork to remove the berries from the stems. Use a large pot to cover the berries with water and bring to the boil and simmer for 20 minutes.
Strain the juice through a muslin cloth or ‘jelly bag’. Measure the deep red juice and pour back into the pot. For every 500 ml of juice, add 500 grams of sugar (some prefer to use soft light brown or demerara), 3 cinnamon sticks and juice from 1 or 2 lemons.
Bring to the boil and simmer rapidly for 15 minutes, then remove the cinnamon sticks.
When the cordial has cooled, pour it into clean sterilized bottles and seal the top. Stored in the refrigerator, this cordial lasts for approx. 6 months.
Add a splash of whiskey, rum or brandy and this wholesome cordial is a warm healing remedy you don’t need an excuse to drink.
