Beef Tongue For Weight Loss
The tongue is the most tender and leanest cut of beef. Great for a diet if you can get past the thought of it. It is high in proteins and nutrients. That is why it is becoming so popular. I remember they used to give it away until its popularity drove the price up. A four-pound sole costs about fifteen dollars now, about the same as family or cube steak.
There are a few tricks to it if it’s your first time. You should start by scrubbing it with a brush. Then put it in cold water for a few hours, making sure to change the water a few times
Get a pan big enough for the tongue and vegetables. Add carrots, celery, garlic, rosemary or thyme (optional) to the pan. Place the tongue on top of the vegetables with the skin on. It is easier to remove the skin after it is cooked. Cover with water to a level about two inches above the tongue. Do not boil hard as this makes it tough, but let it simmer for three hours.
You’ll probably want to skim off the top a few times during cooking. When you’re done cooking, remove the tongue and put it in cold water for a few seconds so you can handle it. Use a knife or scissors to remove the skin. Place them on a plate and cut them crosswise to the desired thickness. Place vegetables around the tongue and serve.
My friends dad was cooking once and when it was cool he took a 64 oz. jar of sweet pickles, removed all the pickles and put in a bowl. He then dipped his tongue in the pickle juice.
