Do Carbohydrates Make You Fat?

Yes, there is a lot of misunderstanding and misinformation about carbohydrates. Thanks to Atkins, people have the wrong idea that eating carbs will turn you into fat. Here are some carb myths busted, plus some facts about Carbs you didn’t know!

First, it is important to understand that there are two types of carbohydrates, Simple and Complex. Another way to describe it is Starch or Sugar. Starch is like pasta, potatoes, bread, etc.

The difference is how it is absorbed by the body. Complex carbohydrates (or Starches) must pass through our system and be digested before they can be absorbed by the body and used as fuel. That’s why they have a high ‘satiety’ value – in other words, they make us feel fuller for longer, and give us a nice slow energy release.

Simple carbohydrates (or Sugar) are the opposite – they are almost not digested and are immediately absorbed by the body as fuel – therefore, they provide quick and easy energy.

The problem with carbohydrates comes when people eat too much of the simple kind. It’s easy to eat too many sugary carbs, partly because the energy they provide doesn’t last long and therefore depletes energy and requires another ‘fix’, and partly because the sweetness makes us crave more. When we eat a lot of simple carbohydrates, our insulin has to work overtime to keep our blood sugar levels stable, and this can lead to diabetes. Sugar, and things high in sugar like candy, biscuits, pop, cakes, etc. also provide very concentrated energy (sugar is 100% carbohydrates, while potatoes, for example, are only 30% carbohydrates) so they are easy to consume. a lot of calories in a relatively small amount of food, and of course this can lead to weight gain. Some scientists say that if sugar were discovered today, the substance would be banned!

Complex carbohydrates on the other hand, tend to be large, bulky, and contain a lot of water and fiber (such as potatoes and cooked pasta) so you need to eat a lot of them before you consume enough to cause weight loss.

Why do we need carbohydrates? Well, it’s the ‘fuel’ body. The central nervous system, brain, liver, kidneys, and muscles (including the heart) cannot function without glucose, which is carbohydrates when broken down by the body. People who don’t eat enough carbohydrates (for example, people following the Atkins diet) can experience hallucinations because the brain doesn’t get enough fuel, as well as liver and kidney damage.

If you starve yourself of carbohydrates, then you will lose weight, but you do this by creating a state called ketosis – a state in which the body can destroy cell tissue to artificially produce glucose – a substance that occurs naturally in carbohydrates.

Yes, if you follow Atkins you will lose some fat, but you will also lose a substantial amount of muscle tissue and risk harming internal organs.

So how much should you eat? The World Health Organization recommends that 60% of your entire diet should consist of carbohydrates. Of this 60% only 20% should be simple carbohydrates (and this includes the sugar found in fruit).

So… Carbohydrates. Yes, too much of the wrong kind can make you unhealthy and fat, but carbohydrates are a very important staple in our diet. Just try to stick to complex types and cut down on that sugar!
